Kankoda Curry(କାଙ୍କଡ ତରକାରୀ)

Ingredients:

  • Kankoda (cube size) - 6-7(କାଙ୍କଡ)
  • Potato(cube size) - 2(ଆଳୁ)
  • Onion paste - 1 medium(ପିଆଜ)
  • Tomato paste - 1 medium(ଟମାଟର)
  • Cinnamon stick - 1 inch(ଡାଲଚିନି)
  • Ginger garlic paste - 1 tbsp(don't put more ginger)(ଅଦା ରସୁଣ ବଟା)
  • Turmeric - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Chilli powder - 1 tsp(as required)(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Cumin powder - 1/2 tsp(ଜିରା ଗୁଣ୍ଡ)
  • Coriander powder - 1/2 tsp(ଧନିଆ ଗୁଣ୍ଡ )
  • Curry powder - 1 tsp(ତରକାରୀ ମସଲା)
  • Mustard oil - 2-3 tbsp(ସୋରିଷ ତେଲ)
  • Water - 1 cup(as required)(ପାଣି)
  • Salt to taste(ଲୁଣ)

Method:

  • Heat Oil in a pan.

  •  Fry potatos and kankoda along with salt and turmeric and keep a side.
  •  In the same pan,heat 1 tbsp oil and saute cinnamon stick,then add ginger garlic paste,turmeric and chilli powder and saute it well for couple of minute.
  • Then add onion and tomato paste,mix well.
  • Then cover the lid and cook the masala till oil release from masala(if required add little water)
  • After that add cumin and coriander powder and saute it for couple of minutes.
  • Finally add Fried kankoda and potatoes and mix it properly and cover the lid for 2-3 mins on medium flame.
  • Then add 1 cup water(according to your gravy consistency),Curry powder and cover the lid and cook till all vegetables became soft.

  • Serve hot with rice or chapati.






Methi and egg stuffed paratha(ମେଥି ଅଣ୍ଡା ପରଠା)

Ingredients:

  • Wheat flour - 1 cup(ଅଟା)
  • Egg - 1-2(ଅଣ୍ଡା)
  • Methi leaves (chopped) - 1/2 cup(ମେଥି)
  • Onion(chopped) - 1(ପିଆଜ
  • Green chillies(chopped) -2(ଲଙ୍କାମରିଚ)
  • Oil - 2 tbsp(ତେଲ
  • Salt to taste(ଲୁଣ)

Method:

  • In a bowl add wheat flour, salt and mix well.Add water slowly and knead a firm dough. Cover the bowl with tight lid and set aside for 20 minutes.
  • In a pan heat oil add chopped onion, green chilies and cook until onion becomes soft.

  • Add methi and saute it for couple of mins.Add eggs, salt and cook until eggs get cooked thoroughly. Set aside and allow it to cool.


  • Divide the dough into small balls and dust it with wheat flour (to avoid sticking on the rolling board).Roll them into small thick circles and place the scrambled eggs in center and seal the edges.


  • Again roll it into flat thin circles gently. Avoid rolling it too much it tends to crack easily.In a hot tawa place stuffed egg parathas and cook it in a medium flame until the brown spots started appearing.Flip and cook on the other side until the brown spots started appearing.
  • Serve hot with curd or sauce.

Bread vada (ପାଉରୁଟି ବରା)

Ingredients:

  • Bread(crushed) - 4(ପାଉରୁଟି)
  • Onion(chopped) - 2(ପିଆଜ
  • Green chillies(chopped) - 2(ଲଙ୍କାମରିଚ)
  • Grated carrot - 2(ଗାଜର) 
  • Coriander leaves(chopped) - 1 tbsp(ଧନିଆ ପତ୍ର)
  • Curd - 1 cup(ଦହି)
  • Oil for fry(ତେଲ)
  • Salt to taste(ଲୁଣ)

Method:

  • Mix all the ingredients in a bowl expect oil.


  • Heat oil and simultaneously make small ball and flatten them and deep fry the bread vada to brown color.
  • Remove it to kitchen towal to absorb excess oil.
  • Serve with tomato sauce.




Coconut ladoo(ନଡିଆ ଲଡୁ )

Ingredients:

  • Grated coconut -1 (ନଡିଆ କୋରା)
  • Sugar as taste - ¾ cup(ଚିନି)
  • Ghee - 2 tbsp(ଘିଅ)
  • Milk - 1 cup(ଖିର)
  • Almond(chopped) - 2 tbsp(ବାଦମ)
  • Cardamom powder - 1/2 tsp(ଗୁଜୁରାତି ଗୁଣ୍ଡ

Method:

  • Heat the ghee in a pan and fry almonds till it became brown color and keep a side.
  • In the same pan add coconut,sugar,milk and mix well and cook on medium flame till it became dry.

  • Lastly add Cardamom powder ,fried nuts and mix well and transfer it to a plate and let it be cool.
  • Take that ladoo mixture into your hand and make small ball and let it dry for 2 hrs and serve.

Ganesh Chaturthi is celebrated with great devotion all over India. People bring home murtis (Idols) of Lord Ganesha and celebrate the festival by worshiping the Lord in a special way for a day and a half, 3 days, 5 days, 7 days or 11 days depending on the family tradition and commitment of each individual.
On the last day of worship the idol is taken out in a colourful and musical procession to be immersed traditionally at a beach.

This is one of the most popular festivals in the Country. There are several reasons for this. Ganpati is after all a popular God. His blessings are invoked at most religious ceremonies as He is the one who can remove all obstacles to success. He is the giver of fortune and can help to avoid natural calamities.

Ganpati, the god of wisdom and the benevolent deity of the dynasty of Peshwas who ruled Maharashtra inculcating a special culture in the state. Ganpati is the herald of auspicious beginnings and is the beloved deity of all.

Moong dal and fish head dry(ମୁଗ ଡାଲି ମାଛ ତରକାରୀ)

Ingredients:


  • Fish head(fried and crushed) - 1(ମାଛ)
  • Moong dal(1/2 boiled) - 3/4 cup(ମୁଗ ଡାଲି)
  • Green peas - 1/2 cup(ମଟର)
  • Tomatos(chopped) - 1(ଟମାଟର)
  • Cumin seeds - 1/2 tsp(ଜିରା)
  • Onion(chopped) - 1(ପିଆଜ)
  • Ginger garlic paste - 1 1/2 tsp(ଅଦା ରସୁଣ ବଟା)
  • Turmeric powder - 1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Chilli powder - 1 or 1/2 tsp(as required)(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Oil - 1 tbsp(ସୋରିଷ ତେଲ)
  • Fish curry powder - 1 /2 tsp(ମାଛ ତରକାରୀ ମସଲା ଗୁଣ୍ଡ
  • Salt to taste(ଲୁଣ)

Method:


  • Heat the oil in a pan.
  • Add cumin seeds,while sizzling, add chopped onion and saute it till onion turne light pink color.
  • The add ginger garlic paste and saute it  couple of mins.
  • Then add tomatos,peas,turmeric,chilli powder and salt and mix it well.



  • Cover the lid and cook till tomatos became mashy.
  • Thn add crushed fish heat and little(1/2 cup) water and mix it well and cook on medium flame for 3-4 mins.

  • Finally add boiled moong dal,fish curry powder and mix well and cook on medium flame for 5 mins.(if u want more gravy,thn u can add water)



  • Serve hot with rice and dal.



Mustard fish curry(ସୋରିଷ ମସଲା ମାଛ)

Ingredients:

  • Fish - 4 pieces(ମାଛ)
  • Mustard seeds - 1/2 tsp(ସୋରିଷ)
  • Garlic cloves - 7-10(ରସୁଣ)
  • Green chillies(slit) - 2(ଲଙ୍କାମରିଚ)
  • Mustard oil - 1 tbsp(ସୋରିଷ ତେଲ
  • Tamarind pulp - 1 tsp(ତେନ୍ତୁଳି ରସ)(optional)
  • Onion(slice) - 1 medium (optional)(ପିଆଜ
  • Cumin seeds - 1/2 tsp(ଜିରା)
  • Chilli powder - 1/2 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Turmeric powder - 1/2 tsp (ହଳଦୀ ଗୁଣ୍ଡ )
  • Salt to taste(ଲୁଣ)

Method:

  • Cut the fish in desired pieces and set it aside.
  • Grind mustard seeds along with garlic to a fine paste.
  • Add raw mustard oil,turmeric powder,chilli powder,fish and salt to it.

  • Take a small saucepan -- just enough to fit in your pressure cooker and grease the container with raw mustard oil.
 
  • Place masala mixture along with fish.
  • Slice the long green chillies and onion length wise and place it over the pieces face down. Pour little raw mustard oil and tamarind pulp(optional) and cover the container.
  • Pour some water in the pressure cooker ensuring that half the container is under water.
  • If the container floats, put a heavy weight on the lid of the container to keep it in place.
  • Shut the pressure cooker and cook on low flame up to one whistle.

  • Serve hot with rice.

Vegetable omlet besan pancake(ଅମ୍ଲେଟ୍ ବେସନ୍ ଚିଲା)

Ingredients:

For egg mixture:

  • Eggs - 1-2(ଅଣ୍ଡା)
  • green chillies(chopped) - 2(ଲଙ୍କାମରିଚ)
  • Carrot(grated) - 1 small(ଗାଜର)
  • Jeera - 1/2 tsp(ଜିରା)
  • Spring onion(chopped) - 1 tbsp(ପିଆଜ)
  • Black pepper powder- 1/2 tsp(ଗୋଲମରିଚ ଗୁଣ୍ଡ)
  • Salt to taste(ଲୁଣ)

For besan:

  • Besan -1/2 cup(ବେସନ)
  • Sooji - 1 tbsp(ସୁଜି)
  • Turmeric - 1 pinch(ହଳଦୀ ଗୁଣ୍ଡ )
  • Water as required (ପାଣି)
  • Oil - 1 tbsp(ତେଲ)
  • Salt to taste(ଲୁଣ)

Method:

  • In a bowl put all the egg mixture ingredients and mix it well and keep a side.

  • In a separate bowl,put besan,sooji,turmeric,salt and mix it properly.
  • Then add water and mix it well and make smooth batter.

  •  Heat(medium heat) the pan,pour spoon full of besan batter and spread evenly.
  •  Spinkle little oil on the top,then pour egg mixture on the top of besan chilla.
  • Cover it for couple of mins on slow flame.
  •  Then flip it and cook for 1 mins.
  •  Serve hot with tomato sauce.
